Running almost entirely off grid on its own solar panels and a wind turbine, Serenity Sands Bed & Breakfast is a two story Mediterranean style house wrapped in balconies and arched porticos, with a garden of flowering trees leading down toward the water. It sits along the quiet waterfront of Consejo Shores, a low key residential stretch of Corozal Bay a few miles north of Corozal Town and not far from the Mexican border, where guests wake to bay views rather than road noise and the pace is set by the tide more than a front desk clock.
Three guest rooms and a two bedroom suite are furnished with locally made wood pieces and Belizean artwork, and each opens onto its own balcony or terrace. Outside, a swimming pool overlooks the bay, and a private beach comes with kayaks and paddle boards guests can take out on their own schedule.
